Lanzhou beef noodles, swimming in a clear soup garnished with white radish, red chillis, green caraway and yellow noodles, is the most famous local snack in Lanzhou.

Dubbed the “Best noodles in China”, the Lanzhou beef noodles were first created by a cook named Ma Liuqi, a native of Dongxiang ethnic group, under the reign of Emperor Guangxu (1875 - 1908) in the Qing Dynasty (1616 - 1911). They have since becomea kind of internationally renowned Chinese-style fast food. The dish has five main features: clear soup, white radish, red pepper, green caraway and yellow noodles.

The noodles can be cut in wider or slimmer sizes to meet different preferences. Boys like er xi (a little wider), while girls like the slimmer ones; the middle-aged and the elderly prefer jiuyezi (leek leaf) and maoxi (slimmer), whereas scholars prefer the slimmer and jiuyezi kind. Farmers, soldiers and workers prefer the wide or very wide variations.
