Lanzhou Finger Mutton, originating from Central Asia, is a popular traditional dish among locals.

People often use their fingers to pick the meat while eating, hence the name of the dish. Among the various tangs of finger mutton across northwestern China, the Lanzhou kind offers the most distinctive flavor.

The tender mutton is boiled in a wok without adding any salt or other spices. Afterwards, the delicacy is cut into slices and served with a drop of sauce or some other seasoning.
