The Sweet Fermented Wheat (tianpeizi in Chinese), is a unique traditional snack of Lanzhou City. It not only tastes great, but can also provide a cooling sensation during the stifling summer heat. The dessert is made from fermented hulless oat (youmai in Chinese) or highland barley (qingke in Chinese).
