The Lanzhou beef noodles were listed as one of the top 10 renowned Chinese noodles recently by China Central Television and China Cuisine Association. Dubbed the “Best noodles in China”, the Lanzhou beef noodles have five main features: clear soup, white radish, red pepper, green caraway and yellow noodles. The noodles can be cut in wider or slimmer sizes to meet different preferences. Boys like er xi (a little wider), while girls like the slimmer ones; the middle-aged and the elderly prefer jiuyezi (leek leaf) and maoxi (slimmer), whereas scholars prefer the slimmer and jiuyezi kind.
